Place nuts or seeds in a small frying pan and toast over medium heat. Add sugar and water and bring to a boil while stirring occasionally. The mixture should begin to thicken, bubble, and become syrupy. Let simmer and continue to stir. Cook until water has fully evaporated and the sugar has crystalized and turns amber. If using pumpkin seeds, they will slightly puff up in the middle.
