|1 tbsp||pumpkin seed oil|
Place nuts or seeds in a small frying pan and toast over medium heat. Add sugar and water and bring to a boil while stirring occasionally. The mixture should begin to thicken, bubble, and become syrupy. Let simmer and continue to stir. Cook until water has fully evaporated and the sugar has crystalized and turns amber. If using pumpkin seeds, they will slightly puff up in the middle.
Candied nuts aren’t just for dessert: try sprinkling candied walnuts over an apple salad for a delicious lunch, toss in cinnamon for a festive pre dinner nibble, or sprinkle with sea salt for a salted caramel effect. If using pumpkin seeds, add 1 tbsp of pumpkin seed oil and a pinch of salt for added flavor!
