- 1⅝ eggs
- 1¼ cups flour
- ⅜ tsp salt
Mix all ingredients in a stand mixer and knead for 8 minutes. If you don’t have a mixer, you can easily mix and knead with your hands.
Chill for 30 minutes then cut into thirds
With a pasta maker at stage zero, roll out the dough, folding it in half, 8 times.
- ⅛ cup More flour, for dusting
Roll out the dough once for each stage until stage 6, dusting with extra flour.
Using your wrists, move the dough to the fettuccine attachment, and cut the dough, flouring thoroughly.
Boil in water for five minutes to serve, with sauce and toppings of choice. For some of the dough, you can add 4 leaves of mashed basil before mixing for some color. Enjoy! 🤩
