Homemade brown sugar

Brown sugar adds wonderful caramel notes and moisture to its confections. But if you live somewhere that soft, molasses-based brown sugar isn't readily available, have no fear! It's easy to recreate store-bought brown (or Muscovado) sugar at home. All you need to do is combine regular sugar and molasses in the right ratio. For dark brown sugar, add an extra tablespoon of molasses to the mixture. Store the brown sugar in an airtight container to be used for a variety of cakes and cookies.
