Grilled halloumi with strawberry chimichurri

- 200 g halloumi
- 100 g strawberries
- 1 shallots
- 1 cloves garlic
- 7½ g mint
- 7½ g parsley
- 7½ g thyme
- cutting board

Cut halloumi into slices approx. 1,5 cm/0.5 in. thick. Finely dice strawberries and shallots. Finely chop garlic. Then pluck the leaves of mint, parsley, and thyme from the stems and finely chop the leaves.

Fry halloumi in a pan or on grill over high heat with a little oil for approx. 1 min. on each side until golden brown and set aside.

- 1½ tbsp olive oil
- 1½ tbsp white wine vinegar
- salt
- pepper
- bowl
- Spoon
For the strawberry chimichurri, whisk together olive oil, honey, white wine vinegar, salt, and pepper in a bowl. Add strawberries, shallots, garlic, and herbs, then mix everything together. Serve over fried halloumi, together with some roasted bread, if you like.
