If you’d like to skip the grill, throw eggplants in a grill pan or into the oven and just focus on the other fillings, again, very quickly, and wrap them up once they’re done. The guarantee for a texture and flavor rich wrap is there in any case. Keep it simple as I did here, or add even more fillings in. You can take it to the middle east by adding some hummus, you can swap yogurt with crumbled feta, or would you like to try and throw some summer fruits like nectarine in there?     Cut eggplant into 1 cm./0.3 in. thick medallions. Finely grate garlic into a bowl. Add olive oil, lemon juice, thyme, salt, and pepper to the same bowl and whisk well. Toss eggplant slices in the bowl until evenly coated with the marinade. Grill on a grill pan or grill for approx. 10 min.

    Slice tomato, cucumber, and red onion to rings. Toss together in the same bowl with olive oil and rest of the lemon juice and set aside. Roughly chop mint, then in another bowl, mix mint, rosemary, and yogurt. Press tortillas on the grill pan to soak up the juice and warm up.
