Cut the butter into small pieces, sift the starch

- 40 g sugar
- 40 g butter

In a bowl put the butter at room temperature and the sugar. Stir until they are well blended like a cream

Add one egg at a time and mix well until absorbed. Do not add the second egg until the first is completely absorbed

Add the starch and mix well until it forms a cream

- 3¼ g baking powder
- ¼ tbsp flour

After the starch has been well absorbed, add the grated lemon peel, the baking powder and the spoonful of flour. Mix everything until absorbed

Preheat the oven to 180ºC and line a baking tray with parchment paper. Pour the dough into the pan and level it as much as possible so that it is uniformly high and there are no air bubbles in the mixture

Bake 30/35 minutes in the oven.

When ready, leave to cool for 20 minutes. It is an extremely crumbly and soft cake, and delicious of course.
