- 5 cloves garlic
- 4 strips dried chilis
- 2 strips green chilis
- 6 tbsp unsweetened shredded coconut
- ½ tsp black peppercorn
- ½ tsp coriander seed
- ½ tsp cumin seed
- ½ tsp turmeric
- ½ onion
Take Dried chilli, Green chilli, Garlic, Shredded coconut, Pepper corns, Coriander seeds, Cumin seeds, Turmeric powder & Onion. Blend everything to make curry paste.
- 1 tbsp coconut oil
- 1½ tbsp cooking oil
- 2 tbsp onions (for frying)
- 2 tbsp tomatoes (for frying)
Take a pan and add Coconut oil and Cooking oil to stir fry onion and tomato. Stir fry onion for 2 minutes in medium and now add tomato and stir till it go soft.
- 350 g shrimp (peeled and deveined)
Add shrimps in the pan and stir fry for 2-3 minutes
Add curry paste in the pan and mix well. Add 3/4 cup water in the paste and mix again. Now close pan for 2 minutes.
Open pan and mix the curry, and close pan for another 3 minutes
- 5 tbsp coconut milk (for thickening)
Open and add coconut milk and mix well for 40sec and close it again for exactly 2 minutes
Add salt as required and stir well
Turn of the stove and add fresh parsley and give a slight mix
