Ingredients

Servings:-4+
200 g red lentils
2 bulbs onions
2 cloves garlic
1 tsp ground ginger
2 tsp turmeric
1 tsp Dried coriander
1 tsp Chilli powder
400 ml coconut milk
400 ml Tinned tomato
250 ml Veggie stock
spinach
1 tsp coconut oil

  • Step 1/4

    • 2 bulbs onions
    • 2 cloves garlic
    • 2 tsp turmeric
    • 1 tsp Dried coriander
    • 1 tsp ground ginger
    • 1 tsp Chilli powder

    Chop onion and garlic and fry off with all the spices in a small bit of oil

  • Step 2/4

    • 400 ml coconut milk
    • 400 ml Tinned tomato
    • 250 ml Veggie stock

    Once the onions are soft, add the tinned tomatoes, coconut milk and stock. Stirring well.

  • Step 3/4

    • 200 g red lentils

    Add the lentils and simmer for 20 minutes.

  • Step 4/4

    • spinach

    Once lentils are soft and cooked, take pan off the heat and stir in baby spinach (to taste) allowing it to wilt slightly.
