“Those cookies are one of my favorite ever, been eating them when I was young. This style of biscuits is from the South of Italy, a small region called Salento”

Ingredients

250 g buckwheat flour
2 heads eggs
50 g sugar
50 ml olive oil
1 pinch salt
1 pinch vanilla extract
  • Step 1/1

    put everything all in once in the flour and start mixing it. For the mixture is fine to be a bit fluffy rather than being consistent. When put them in the oven pit them onto a backing tray with some backing paper and leave them 40 mm apart each other. bake for 20 min about and 180 degree static. enjoy it
