Step 1/4
- 3 slices bacon
- 1 chorizo
Cut up both the chorizo and bacon slices into bite size pieces and add into a hot pan with a oil coating. Cook till fat is rendered
Step 2/4
- 1 onion
- 1 red bell pepper
- 2 cloves garlic
Add chopped onion, garlic, and chopped bell pepper into the pan with bacon and chorizo. Cook until the onions are translucent.
Step 3/4
- 2 tbsp tomato paste
- 1 tbsp sweet paprika powder
- 1 tbsp ground cumin
- 3 scoops rice
- 2 tbsp salt
- 1 canned kidney bean
- 3 bay leaves
Once onion is translucent, add the spices, tomato paste and dry rice to the pan. Stir for one minute before adding water and beans and bay leafs.Bring to a medium high heat until the water starts boiling then return heat to medium low and place a lid over.

Once water has cooked off remove Bay leaves from the rice and serve.
