Preheat fan forced oven to 160°C
Line a cake tin with baking paper.
Sieve the self raising flour in a bowl.
Measure olive oil in a bowl and place the bowl in a microwave for 30 seconds.
Add little bit of self raising flour at a time to oil and stir with a whisk.
Add milk to oil and flour mixture and mix well until a dough like substance.
Seperate egg yolk from egg white. Place egg yolk in mixture and leave egg white aside. Then mix together.
Add a pinch of salt and a couple drops of vinegar to the egg white.
Slowly add caster sugar to egg white while you use an electric beater to make the egg white till it is light and fluffy.
Slowly fold egg white into the mixture until light and fluffy.
Pour mixture into your prepared cake tin and tap out any air bubbles.
Place cake tin into a larger tin sitting in a base of water.
Place in oven for 1 hour.
Take out of the oven, cut, and enjoy!
