Chocolate fudge cake (chefnun)
"Recipe for cake base which can be complemented with various frosting. I made coffee swiss meringue buttercream in the picture. The cake texture is somewhat brownie-like but less dense. When whisking the ingredients, this is just to mix them to blend and not to get the batter to trap air. Thus whisking by hand is ok. If hand mixer is used, keep at low speed."

Cake pan (7 inch for full recipe)
Step 1/7
Melt butter and set aside.
Step 2/7
In the mixing bowl, add sugar, brown sugar, cocoa powder, baking soda, salt and mix to blend.

Add hot water in 3-4 portions ( hot enough to dissolve the ingredients) and keep stirring. Left the ingredients to cool to room.

Once cooled down. Warm the oven to 170c. Add oil, melted butter and stir to mix.

Add egg and egg yolks, whisk to mix.
Step 6/7
Add cake flour (sifted) and whisk to blend. Low speed if use hand mixer. Add milk and buttermilk, whisk again.

Transfer to 7” cake pan, lined with baking paper. Note that batter looks runny (not like sponge or chiffon). Bake at 170 ( no fan)for 40-45 min.
