“Simple chickpea koftas that will please anyone and go with anything! This dish is extremely versatile so feel free to add anything you feel would work to the koftas! They are great for a quick dinner with some salad and sweet potato or for a lunch or snack. They are great for barbecues and kid friendly, and SUPER easy to make.”

Ingredients

Servings:-2+
1 bag canned chickpea
carrots
onion
1 tbsp mango chutney
½ tbsp curry powder
½ tbsp olive oil
1 pinch salt
1 pinch pepper
  • Step 1/5

    • onion

    Grate the carrot and finely chop the onion

  • Step 2/5

    • 1 bag canned chickpea
    • 1 tbsp mango chutney
    • ½ tbsp curry powder
    • 1 pinch salt
    • 1 pinch pepper

    Combine all ingredients in a mixing bowl (except the olive oil) and mash using a fork

    Once mashed, make 2cm thick disks out of the mixture- 2 per person

    • ½ tbsp olive oil

    Fry the koftas in olive oil for 2-3 minutes each side or until cooked

  • Step 5/5

    Serve onto a plate with salad and sweet potato fries (or whatever you want) Enjoy!
