- 2 carrots
- 1 onion
Grate the carrot and finely chop the onion
- 1 bag canned chickpea
- 1 tbsp mango chutney
- ½ tbsp curry powder
- 1 pinch salt
- 1 pinch pepper
Combine all ingredients in a mixing bowl (except the olive oil) and mash using a fork
Once mashed, make 2cm thick disks out of the mixture- 2 per person
- ½ tbsp olive oil
Fry the koftas in olive oil for 2-3 minutes each side or until cooked
Serve onto a plate with salad and sweet potato fries (or whatever you want) Enjoy!
