Ingredients

2 tbsp olive oil
carrots
onion
celery
4 leaves bay leaves
salt and pepper
6 cups veggie broth
1 cup egg noodles
2 tbsp chopped parsley
  • Step 1/6

    • 2 tbsp olive oil

    Heat olive oil in a pot over medium heat.

    • celery

    Add carrots, onion, celery about 5 minutes until soft.

    • 4 leaves bay leaves
    • salt and pepper

    Add bay leaves and salt and pepper for seasoning

    • 6 cups veggie broth

    Turn up heat, and add broth and bring to boil

    • 1 cup egg noodles

    Add noodles until soft, about 8 minutes

  • Step 6/6

    • 2 tbsp chopped parsley

    Take off heat and add in parsley. Let sit until cooled and enjoy!
