Step 1: chop the chicken breasts into small chunks then season them with the cajun spice.
Step 2: Fry the chicken on low heat until cooked and then set aside.
Step 3: Add the pasta to a pan of salted boiling water.
Step 4: Brown the onion and garlic on a low heat for 1min then add the chicken stock, peppers, tomatoes, carrots, ricotta and paprika to the pan and simmer for 10mins. then add the pasta and chicken to the pan and stir until everything is mixed in.
