“These pancakes can be enjoyed either warm or cold. You can also grate carrot into the dough to give it some color, but I personally prefer this simpler version. If mayo is too heavy for you, you can always use soy sauce for dipping.”

    Use a mandoline to slice white cabbage into thin strips. Finely slice scallion.

    In a bowl, whisk together eggs, soy sauce, sesame oil, and salt. Stir flour into egg mixture, then fold in sliced cabbage and spring onion.

    To make mayo, whisk egg yolk in a bowl and slowly pour in vegetable oil, constantly stirring, until a smooth mixture is formed. Add lemon juice and mustard to bowl, season with salt and sriracha, and mix to combine.

    Add some vegetable oil to a pan. Ladle cabbage batter into the pan to form a pancake. Fry on both sides until crispy. Transfer pancake to a paper towel to absorb excess oil. Serve cabbage fritters with sriracha mayo. Enjoy!
