Step 1/2
- 2 bulbs scallions
- 1 ginger
- ½ tbsp salt
- 1 broiler chicken
Blanch the chicken to get rid of the blood. You can add some cooking wine. While waiting, julienne the scallions and slice the ginger. Once the chicken is cleaned, give it a short message with the salt-just a little bit is enough. Then... emmm... stuff the chicken with as much ginger and scallion as possible as the picture shows.

- 2 Date (optional)
Set the stuffed chicken in the pot with enough water for the soup. Add the rest of scallions and ginger to the water. You can also add a leap spoon of oyster sauce but it’s optional. Keep the lid on and cook the soup for 45ish minutes. If you’d like to add dates and goji berries, I suggest add them in the last 10-15 minutes. And it’s just this easy! Bon appetite!
