"I love this recipe because it’s low calorie (under 300 cals including toppings of choice), really easy and it feels like a treat. I have seen this recipe all over the internet with just eggs and banana, but that makes what I can only describe as a banana omelette, so the addition of a small amount of flour really brings these together and makes them light and fluffy. You can easily substitute the plain flour for gluten free flours or even ground almonds. Enjoy! "

Ingredients

Plain flour

Cinnamon

    • 2 bananas
    • 4 eggs
    • fork
    • bowl

    Mash Bananas in a jug or bowl and add the eggs. Whisk with a fork until no lumps remain.

  • Step 2/4

    • 2 tbsp Plain flour
    • 1 tsp Cinnamon

    Add the flour and whisk until smooth. Add the cinnamon and sweetener (honey, agave etc) if desired, and a pinch of salt. You can add other ingredients e.g. blueberries.

  • Step 3/4

    • nonstick pan

    Heat a non stick pan to medium heat, and portion pancake batter out into small pancake shapes in the pan with a jug or ladle. Cook 2 mins on one side and 1 minute on the other.

  • Step 4/4

    Serve with topping of choice, e.g. natural yoghurt or fruit compote. Recipe should make 8 pancakes.
