Amazing fluffy pancakes
Step 1/ 6
- 150 g Self - raising soda bread flour
- 38⅓ g sugar
- ⅔ eggs
Fold together the sugar, eggs and self - raising soda bread flour, until combined.

- 190 ml buttermilk
Mix in the full buttermilk bottle (1 pint/570ml) until the mixture comes to a porridge consistency.
Step 3/ 6
Make sure you keep as many air bubbles as you can to help the rising. Spoon the mixture onto a pan at medium heat, depending on how big you want your pancakes.

Keep an eye on the pan to make sure that the pancakes don’t burn, and flip them over when golden brown on one side.

Take them of the pan and enjoy with sugar and lemon, or maple syrup or any of your own pancakes!!!

- Fresh Blueberries about five in each pancakes
If you want to add a bit more flavour to your pancakes, you can drop in a few fresh blueberries to the pancakes as soon as you put the mixture in the pan.
