Crack 1 egg into a bowl, and add sugar. Whisk.
Add almond milk and whisk.
Sieve flour into the bowl and continue whisking. Add baking powder, salt, oil and vanilla Essence, whisk. Tip: do not over-whisk batter to avoid the batter being flat, as you want pancakes to be fluffy.
Heat a pan on low heat.
Scoop a ladle of batter and slowly pour it into the pan.
When holes are formed on the surface of the batter, and the sides are dry, flip it over.
Repeat previous step for remaining batter and enjoy!
