""Farmer's breakfast" or the Bauernfrüstück is one of those absolute German classics that do super well in the air fryer. Who says rustic can't go into the new trendy air fryers? It's still the hearty and satisfying meal we all know and love. Same addition of pickles adds that delightful tang all the same as the original. If you also have leftover boiled potatoes, use them! They'll be extra crispy and golden on the pan, into the air fryer. The charming Bauernfrüstück celebrates simplicity, and this time, the celebration in your new favorite kitchen appliance."

    For this air fryer Bauernfrüstück recipe, first cook potatoes with skin on in a pot of boiling and salted water and cook for approx. 18–20 min., depending on the potato size, until a fork can poke through with some resistance. Then drain and let the potatoes cool down.
    • 250 g waxy potatoes

    For this air fryer Bauernfrüstück recipe, first cook potatoes with skin on in a pot of boiling and salted water and cook for approx. 18–20 min., depending on the potato size, until a fork can poke through with some resistance. Then drain and let the potatoes cool down.

    While the potatoes are cooking, dice onion and thinly slice chives. In a bowl, whisk eggs with milk and then season with salt and pepper. Peel the potatoes and cut into approx. 1.5 cm /0.6 in. thick slices.

    While the potatoes are cooking, dice onion and thinly slice chives. In a bowl, whisk eggs with milk and then season with salt and pepper. Peel the potatoes and cut into approx. 1.5 cm /0.6 in. thick slices.

    Melt clarified butter in a big non-stick frying pan and add potato slices to fry for approx. 8–10 min. or until golden. Then add chopped onion and cubed bacon and fry briefly. Transfer potato mix into an air fryer mold. Pour egg mixture on top and place in the air fryer at 180°C/356°F, air-frying for approx. 15–20 min. until the egg is set. Serve with chives and pickles.
