Zucchini Muffins
Ingredients
Step 1/7
Preheat oven to 350 degrees F and grease muffin pan.
Step 2/7
- Âź cups all-purpose flour
- â cup brown sugar
- â tsp baking soda
- â tsp ground cinnamon
- â tsp nutmeg
- â tsp salt
- â tbsp ground flax seed
Combine dry ingredients: flour, brown sugar, baking soda, cinnamon, nutmeg, ground flax seed, and salt in a mixing bowl. Set aside.
Step 3/7
- â egg, lightly beaten
- â cup applesauce, unsweetened
- â tsp vanilla extract
- â cup grated zucchini
- â cup grated carrot
In a large mixing bowl, whisk together egg, applesauce, vanilla extract, grated zucchini and carrot.
Step 4/7
Mix together by slowly adding dry ingredients into the large mixing bowl with the wet ingredients.
Step 5/7
- â cup miniature semi-sweet chocolate chips
- â cup chopped walnuts
Fold in chocolate chips and walnuts.
Step 6/7
Fill prepared muffin cups about two-thirds full with muffin mixture.
Step 7/7
Bake in the oven for approximately 18-20 minutes.
