Zucchini Muffins
Ingredients
Step 1/ 7
Preheat oven to 350 degrees F and grease muffin pan.
Step 2/ 7
- ¼ cups all-purpose flour
- ⅛ cup brown sugar
- ⅛ tsp baking soda
- ⅛ tsp ground cinnamon
- ⅛ tsp nutmeg
- ⅛ tsp salt
- ⅛ tbsp ground flax seed
Combine dry ingredients: flour, brown sugar, baking soda, cinnamon, nutmeg, ground flax seed, and salt in a mixing bowl. Set aside.
Step 3/ 7
- ⅛ egg, lightly beaten
- ⅛ cup applesauce, unsweetened
- ⅛ tsp vanilla extract
- ⅛ cup grated zucchini
- ⅛ cup grated carrot
In a large mixing bowl, whisk together egg, applesauce, vanilla extract, grated zucchini and carrot.
Step 4/ 7
Mix together by slowly adding dry ingredients into the large mixing bowl with the wet ingredients.
Step 5/ 7
- ⅛ cup miniature semi-sweet chocolate chips
- ⅛ cup chopped walnuts
Fold in chocolate chips and walnuts.
Step 6/ 7
Fill prepared muffin cups about two-thirds full with muffin mixture.
Step 7/ 7
Bake in the oven for approximately 18-20 minutes.
