Cut figs in wedges, ribbon courgette using a vegetable peeler and cut goats cheese in bite size cubes. Roughly tear prosciutto in smaller slices. De-shell pistachios.
On a large platter or individual plates arrange salad - make the bed of rocket, then add prosciutto, figs, courgette, goats cheese and pistachios. Drizzle with olive oil, season with salt & pepper and serve.
