"This is my favourite quick paella recipe. Suitable for vegetarian and vegans. This is very simple to make and can be made in normal pan with lid if you don’t have traditional paella pan. Cooking time may vary due to different cooking appliances. Please let me know if you like the recipe, enjoy."

Ingredients

paella rice

Vegetable stock cube

olive oil

parsley (for garnish)

green beans
1 tbsp
smoked paprika powder
½ tbsp

  • Step 1/3

    • 1 red bell pepper
    • 1 onion
    • 3 cloves garlic
    • 3 tbsp olive oil
    • 100 g green beans
    • 2 carrot diced

    Heat olive oil, fry chopped onion, garlic, green beans, carrots and bell peppers until soft. Meanwhile prepare vegetable stock from cubes dissolve in boiling water.

    • ½ canned crushed tomato
    • 550 ml Vegetable stock cube
    • 1 tbsp smoked paprika powder
    • ½ tbsp salt
    • 400 g White beans

    Now add crushed tomatoes, smoked paprika and salt. Cook for 5 minutes and add white beans. Mix well and add stock to the mixture.

  • Step 3/3

    • 250 g paella rice
    • 1 pinch saffron
    • 15 g parsley (for garnish)

    Finally add paella rice and saffron mix well. Cook this for at-least 15 min on medium flame. Paella should be slightly crisp from the bottom but not burnt. When the water evaporates, paella should be ready to serve. add parsley to garnish and serve with choice of your bread and lemon slice. Enjoy 😊
