Vegan chocolate chips and salted caramel cookie BARS
First , Preheat the oven to 180 Celsius. Line an 9 x 9-inch pan with parchment paper or spray the pan with baking spray and set aside.
- ⅔ Flax eggs
Second, prepare the flax egg by combining 2 tablespoons of ground flaxseed with 6 tablespoons of water. Let sit for 10 minutes ( until a gel is formed).
- 53⅓ g spelt flour
- ⅓ tsp baking soda
- ⅓ pinch salt
Then, in a small bowl, add the flour, baking soda, and salt, and mix well.
- 33⅓ g brown sugar
- 33⅓ g Vegan butter
- ⅓ tsp vanilla extract
In a different bowl, using a hand mixer , cream together the softened vegan butter with the sugar. Once smooth and creamy, add in the vanilla extract and the flaxseed eggs .
- 16⅔ g Dark chocolate chips
- 16⅔ g chocolate chips
- 10 g Vegan Salted caramel chunks
- ⅓ tbsp oat milk
To this bowl, Gently add in the dry ingredients and mix well ( if too dry add a tablespoon of oat milk). Then, using a rubber spatula, fold through the salted caramel and chocolate chips.
Then transfer the mixture into the lined pan and bake for 25 minutes, or until a toothpick comes out clean. Finally, remove from the oven and let cool in the pan completely before slicing.
