Turkey Zucchini Meatballs
Preheat oven to 400 degrees F and line baking sheet with parchment paper.
Grate the zucchini and onion using a cheese grater, drain using either a paper towel or cheese cloth.
Combine ground turkey, olive oil, minced garlic, eggs, Italian seasoning, parsley, zucchini, onion, and Parmesan cheese. Use your hands to mix all the ingredients together until combined.
Scoop meat out (about 2 tablespoons at a time) and form into balls, place on your lined baking sheet.
Bake in the oven for about 20-25 minutes or until evenly cooked through (at least 165 degrees F).
Serve sauce of your choice over top of meatballs.
