Tomato and watermelon salad
"This simple and refreshing salad is a darling on a hot summer day. Including the best produce of summer's bounty, it extends our favorite combination of tomato and feta. I recommend using different tomatoes, for a mix of textures, but use what you have on hand! Lime is what gives this salad a real flavor kick, but you can substitute it with lemon juice or white or balsamic vinegar. If you don’t have basil, parsley and mint can be great swaps."

- 100 g cherry tomatoes
- 1 tomatoes
- ½ kg watermelon
- ¼ red onion
- 50 g feta cheese
- salt

Halve cherry tomatoes, and cut bigger tomatoes into bite-sized pieces. Remove the peel of the watermelon and cut it into chunks as well. Add tomatoes and watermelon to a big bowl, season with salt, and let sit for 5 min. Slice red onion and cover with cold water, set aside. Cut feta cheese into cubes.

- ½ tbsp olive oil
- ½ lime
- 1½ sprigs basil
- salt
- pepper
Drain the red onion and add to the bowl together with feta cheese. Drizzle some olive oil over the salad, add lime juice and some basil leaves, and toss gently to combine. Transfer to a serving plate, serve, and enjoy!
