Tomato dates jam with burrata cheese

- 50 g pitted dates

Dice pitted dates.
- 125 g canned whole peeled tomatoes
Let tomatoes and dates simmer in a pot.
- 25 g pine nuts
Toast pine nuts in a preheated oven at 160°C/320°F for 10 min.
- ½ lemon
Peel a lemon and remove the white parts. Then cut the peel in super thin stripes.
- 25 ml olive oil
Season with olive oil, salt, and pepper to taste.
- 4 sprigs mint (for garnish)
Cut mint in fine stripes.
- ½ burrata cheese
- 100 g mixed tomatoes
Add the tomato dates jam to a plate and place the burrata cheese on top. Garnish with mixed tomatoes, lemon peel, mint, and pine nuts. For finish, drizzle with olive oil and season with salt and pepper again. Enjoy!
