Chop the chocolate. Boil the cream with honey and pour it on the chocolate. Stir until the mixture is smooth.
Add the butter and stir until it’s smooth.
Pour the mixture in a frame (+- 1mm thick) and let it solidify in the fridge minimum 2h.
Beat the eggs with red cane sugar. Beat the butter with brown sugar. Add everything together and mix.
Add flour, cocoa powder, baking soda and fine sea salt. Mix. Add the chocolate chips and the cocoa nibs.
Cut out small squares of solidified ganache of about 2cm side. Shape the dough into small balls and put a square of ganache in each ball.
Bake in a hot oven at 180°C during 10min.
