Wash, peel and dice the carrot.
Coat the bottom of a pot with a small amount of oil (about 1 tsp). Place carrots over the oil and heat. Fry carrots for about 5 minutes
Stir to avoid sticking to the bottom, until the carrot is slightly cooked
Take about 2 1/2 cups of taco filling (the filling is made of beef, red bell pepper and onions)
Add in taco filling, and stir until combined
Add beef stock and water to simmering taco sauce. If a thicker sauce is desired, reduce the amount of water. Season to taste.
Allow sauce to boil for about 15 minutes, or until carrots are soft.
While the sauce boils, combine 1/2 cup of milk and 3 tbsp of starch in a bowl.
Add in milk and starch mixture. Stir thoroughly until sauce thickens
Once sauce boils and thickens, it is ready to serve!
Enjoy! Leftovers can be stored in an airtight container, and either eaten the next day, or frozen for a couple of weeks
