You’ll have to sit down before you eat this, it’s THAT GOOD. The meat pairs well with mashed potatoes & a plethora of vegetables. For a spiritual experience, put on a thick flour tortilla and top with a Mexican shredded cheese blend."

Ingredients

pork tenderloin
½ cup
extra-virgin olive oil (for marinating)
8 tbsp
light brown sugar (for marinating)
8 tsp
ground ginger (for marinating)
8 tsp
mustard powder (for marinating)
1 cup
water (lukewarm)
½ tsp
light brown sugar (for sprinkling)

Utensils

1 airtight container (large), 1 whisk, 1 scissors, Instant Pot, Trivet, 1 baking pan (8x8 in., optional)

    • ½ cup extra-virgin olive oil (for marinating)
    • 1 cup soy sauce (for marinating)
    • 8 tbsp light brown sugar (for marinating)
    • 8 tsp ground ginger (for marinating)
    • 8 tsp mustard powder (for marinating)
    • 5 tsp garlic (grated, for marinating)
    • 1 airtight container (large)
    • 1 whisk

    Combine ingredients in a container & whisk together well.

    Cut tenderloins across the middle (creates two 5-6 inch sections per tenderloin).

    Place pork tenderloin into marinade & repeatedly rotate tenderloins coating them well.

    Close container and shake vigorously.

    Place in the refrigerator to marinate overnight.

    • 1 tbsp olive oil (for frying)
    • Instant Pot

    Add 1 tablespoon of Extra Light Olive Oil to the inner pot.

    Press SAUTÉ—Normal

  • Step 8/22

    Allow oil to heat for 90 seconds.

    • 2 pork tenderloin

    Sear each side of the tenderloin until golden all over (approximately 6 minutes total) then remove from pot.

    Press CANCEL

    • Trivet

    Put in the trivet (do not deglaze bottom of pot).

    • 1 cup water (lukewarm)

    Add water.

    Arrange pork on trivet in pot.

    Close & lock the lid.

    Press PRESSURE COOK—Normal, High, 5 minutes

    Allow 1 minute Natural Release.

  • Step 17/22

    Push steam release valve handle down to Quick Release.

  • Step 18/22

    Remove trivet & let meat rest for 5 minutes.

  • Step 19/22

    Cut slices against the grain.

  • Step 20/22

    • 1 baking pan (8x8 in., optional)

    Place meat slices in square baking pan.

  • Step 21/22

    • ½ tsp light brown sugar (for sprinkling)

    Sprinkle with 1/2 tsp of brown sugar.

  • Step 22/22

    Ladle hot drippings from inner pot gently over the meat.
