“Type of pepper can vary. Choose your own spice level but the color of the pepper will vary to color of the sauce. Stick to red or orange colored peppers to keep sauce vibrant. I used this sauce for pasta as well as a pizza sauce. For pizza; simply steep in fresh oregano leaves.”

½ white onion
3 cloves garlic
3 sprigs basil

    • Plum tomatoes
    • peeler
    • knife
    • bar spoon

    Concasse tomatoes and remove all skin and seeds, then rough chop.

    Remove seeds and stems from hot peppers and small dice.

    • ½ white onion

    Small dice half a white onion.

    • 3 cloves garlic

    Thinly slice garlic.

    In sauce pot slowly sweat diced onion and hot pepper until translucent and completely cooked.

    In same sauce pot, sweat sliced garlic until translucent and completely cooked.

  • Step 7/8

    Add chopped tomatoes, full springs of basil and cover with water, keep on simmer and reduced water by about half.

    Pour tomato liquid into a food mill and process through. Reduce down in pan if needed and season accordingly.
