Concasse tomatoes and remove all skin and seeds, then rough chop.
Remove seeds and stems from hot peppers and small dice.
Small dice half a white onion.
Thinly slice garlic.
In sauce pot slowly sweat diced onion and hot pepper until translucent and completely cooked.
In same sauce pot, sweat sliced garlic until translucent and completely cooked.
Add chopped tomatoes, full springs of basil and cover with water, keep on simmer and reduced water by about half.
Pour tomato liquid into a food mill and process through. Reduce down in pan if needed and season accordingly.
