|200 g||smoked salmon|
|100 g||unsalted butter|
|1 tbsp||crème fraîche|
|salmon roe (for serving)|
|parsley (for garnish)|
Cut each croissant into four pieces. Season with sea salt and pepper. Cut the smoked salmon into large pieces. Place croissants cut-side down in a frying pan and heat for approx. 1 min., then distribute the salmon pieces on top of the croissants.
Place the eggs and a half of the butter in the frying pan and stir to scramble until eggs are done to your liking. Season with salt and pepper. Remove from heat, add creme fraiche, remaining butter, and top it with some parsley.
Place about a spoon of scrambled eggs on each croissant and top it with salmon roe. Serve with coffee or fresh juice and enjoy!
