Simple red cabbage slaw

- ¼ red cabbage
- 2 carrots
- cutting board
- knife
- mandoline
- box grater
- large bowl
Halve red cabbage, remove the stem and slice very finely with a mandoline, vegetable peeler or sharp knife. Peel the carrots as desired and grate them coarsely. Add both into a large bowl.

- 2½ tbsp lime juice
- 15 g ginger (grated)
- 2 tbsp olive oil
- 1½ tbsp agave nectar
- salt
- bowl
- whisk
In a small bowl, mix lime juice, ginger, olive oil, and agave syrup until a smooth dressing forms. Season to taste with salt.

- 25 g mint
- disposable gloves
Pour dressing over the cabbage mix. Massage dressing into the mix with gloves on. Remove stems and finely chop mint. Mix into the slaw. Garnish with lime wedges and mint leaves as desired and serve immediately.
