"This is a dish my mom has made over and over again and it never gets old. I have made it my own and I like to prepare it when I need something quick and delicious or for serving big crowds. The ingredients can also be manipulated to suit each type of foodie. Hope you enjoy it!!"

olive oil

Mushrooms

shrimp
1 tbsp
soy sauce

eggs
¼ cup
Green onions
1 pinches
salt
1 dashes
pepper
  • Step 1/6

    Use rice cooker for perfect rice - 1 1/2 cups of rice to 2 cups water

  • Step 2/6

    Chop onions, garlic, carrots, mushrooms and sauté in olive oil.

  • Step 3/6

    Be sure to clean shrimp by cutting down the back to the tail with shell off. Add to pan to sauté until color turns pinkish

  • Step 4/6

    When rice is done add to pan of vegetables. Pour in soy sauce and mix all together.

  • Step 5/6

    Make a hole in the middle of the rice and add 1 tsp olive oil. Crack eggs and scramble in the hole.

  • Step 6/6

    Add salt and pepper to taste. Mix in the chopped green onions. Optional — top with toasted sesame seeds.
