Ingredients

canned chickpeas (drained)
onion
bell pepper
4 cloves garlic
½ cup cilantro
1 tbsp chili powder
1 tbsp ground cumin
1 tsp turmeric
2 tbsp extra-virgin olive oil

    • onion
    • bell pepper
    • 4 cloves garlic
    • ½ cup cilantro

    julienne the onion, bell pepper, and garlic. roughly chop the cilantro

  • Step 2/8

    combine all ingredients in a bowl and stir to combine

  • Step 3/8

    spread out the mixture evenly on a sheetpan

  • Step 4/8

    bake at 350 for 15 minutes

  • Step 5/8

    slice limes while the chickpeas are baking

  • Step 6/8

    stir the mixture and add sliced limes to the top of the mixture

  • Step 7/8

    bake for another 20 minutes

  • Step 8/8

    serve with warm tortillas, chips, rice or salad!
