Gather all ingredients. Wash the vegetables, and core them.
Chop onion, tomatoes and green bell pepper. Red bell pepper would also work fine, but the green enhaces the colors of the salad.
Stir and season with oil, salt, pepper and lemon juice to taste. Be pretty generous, for it is going to give this a really good taste. Let rest for about 15 minutes. Although resting isn’t really necessary, I do believe it enhaces the flavours. If in a rush, then eat right away, but allow to rest for a better taste!
Serve along with some bread with butter, salt and pepper!
