Add oil to the pan and at a medium high heat
Flour both sides of basa fillet
To keep the fish from sticking once the oil has expanded from the heat drag the tail of the fish in the hot oil for thirty seconds to one minute. It is important the oil is hot.
Season with salt and pepper
Cook for two minutes then flip
Add butter on fish and place sage on top
Cook for two or three more minutes then serve with a wedge of lemon
