Roasted Butternut Squash Noodles

- 16 oz butternut squash
Skin the butternut squash, then either cut into sections and slice into noodles, or use a spiralizer to create the noodles.
- 2 tbsp extra-virgin olive oil
- baking pan
Preheat oven to 425F. Grease a baking pan with the olive oil. Place the butternut squash noodles in the baking pan and toss so the oil coats all of the noodles.
- 1½ tsp salt
- 1½ tsp pepper
- 2 cloves garlic
Toss the noodles while adding the seasonings.
- ½ tsp chili oil (for serving)
Place the baking pan in the oven for 10 minutes, then serve. Add the chili oil for extra spice.
