Raw mangoes

Sugar - finely ground
⅜ sprigs
saffron
⅛ tsp
ground cardamom

  • Step 1/4

    • ⅝ Raw mangoes

    Pressure cook raw mangoes for 2-3 whistles - remove after cooling - seperate the pulp & let it cool.

  • Step 2/4

    • Ÿ Sugar - finely ground
    • ⅜ sprigs saffron
    • ⅛ tsp ground cardamom
    • salt

    Take the pulp in a mixie - add 2/2.5 cups of powdered sugar (add more sugar as reqd. ...taste should be equal amounts of tangy & sweet) + cardamom powder + saffron sprigs + half a pinch of salt + 3-4 cups of water - whisk till the mixture is a thick squashy consistency pulp

  • Step 3/4

    Your Squash is ready - transfer to a bottle and store refrigerated for further use

  • Step 4/4

    For serving - add squash 1/4 glass + water + ice cubes - add sugar if required ...serves 10-15 glasses
