Quick banana pancakes (ready in 15 min.)

- ½ bananas (overripe)
- ¼ egg
- 45 ml milk

For fluffy banana pancakes, mash ripe bananas in a bowl using a fork. Add egg and milk, then whisk everything together until smooth.

- 32½ g cake flour
- ¼ baking powder
- ⅛ tsp ground cinnamon
- ¼ pinch salt

Sift in flour, baking powder, cinnamon, and salt into a separate bowl. Add to the wet ingredients and stir until you have a smooth batter.

- maple syrup (for serving)

Heat a nonstick pan over medium heat and add just a little butter or oil. Use a spoon to drop small portions of the batter into the pan. Cook for approx. 2 min., until bubbles form on the surface. Flip and cook for approx. 1–2 min. more until golden brown. Repeat with the remaining batter. Stack the pancakes on a plate and serve with banana slices and maple syrup, if you like.
