    • ¼ egg yolk
    • ¼ tbsp vanilla extract
    • cup agave nectar

    Add pumpkin, eggs, vanilla, and agave to a bowl, beat for 5 minutes(DO NOT skimp on beating time)

    • ¼ tbsp pumpkin pie spice

    Sift all dry ingredients into the wet. Fold until just combined

    Fold in chocolate chips (the dough will be soft)

    On a pan lined with a silicone baking mat, divide dough into 8 dollops (you may need to shape them to be more uniform)

    Bake at 425 for 7 minutes, then lower oven temp to 350 and bake for another 3 minutes or until fully set
