Preheat oven to 200°C.
Pork ribs crosswise slice and lightly season with salt and pepper
Mix all dry ingredients. Leave 1 tbsp (~1/3) of the mix for glaze. Rub the rest-seasoning (~2/3) all over the ribs on both sides and drizzle with olive oil.
Put foil on baking tray and cover pork ribs. Bake for 1 hour.
Make the glaze: Mix 1 tbsp of the seasoning mixture with 2 tbsp honey and 1 tbsp minced garlic. After 1 hour baking bring the ribs out and pour 3 tbsp meat juice to the mixture. Put on heat until the glaze bubbling. Cover the glaze on both side of the ribs.
Turn the oven into 240°C. Bring the ribs back in the oven, uncover. Bake for 10 more mins to lightly char and caramelise the edges.
Make the sauce: 2 tbsp meat juice - honey - mustard - minced garlic - salt and pepper. Put on heat until bubbling.
Let the ribs rest for 10 minutes before slicing.
