Grease a pan with butter and turn the oven on 180 degrees. Cut the pumpkin and cut 300 grams into small cubes.
In a blender, mix the eggs, sugar, oil and pumpkin cubes. Grind well until liquid.
In the meantime, place the flour in an electric mixer, add the pumpkin mixture and mix well until it becomes an homogenous dough.
Then mix a pinch of cinnamon and stir.
Add the grated coconut and the baking powder. Mix everything very well one last time.
Bake for about 40/50 minutes.
Unmolds still hot. Then sprinkle with powdered sugar or other toppings such as coconut or chocolate.
