"This recipe can be made with dory, pomfret, mullet, or other types. Ideally it would be pan-fried or barbecued in banana leaves. But for lack of availability, I wrapped the fish in foil and baked it in the oven. The paste is best prepared with mortar and pestle and rubbed into the fish. For best results, marinade in the fridge over night."

    Clean the fish, wash and pat fish dry. Slice 3x on each side lengthwise with a sharp knife up to the bone.

    Peel and pound garlic and ginger to a paste. Dissolve tamarind in 2 tbsp water and discard seeds and solids, add tamarind pulp to the paste. Add all other spices, lemon juice, soy sauce and chili paste and grind to a spice paste.
