Butterfly chicken breast and coat one side with Nandos marinade. Grill sauce side up. Optional pre-step: marinade chicken for a few hours for better taste + juicy chicken.
While chicken is grilling, bring quinoa to a boil and cook for about 7 minutes until fluffy, or according to package instructions.
When partially cooked on one side, turn chicken breast over and coat the other side in sauce. Continue to grill until chicken is cooked through.
When quinoa is almost cooked, add green peas and sweet corn and warm through. Season with lemon juice and stir for more flavourful quinoa.
Serve cooked quinoa in half of a bowl, and fill other half with lettuce. Top with chicken, cherry tomatoes and an extra drizzle of lemon.
