  • Step 1/6

    Brown beef in skillet with olive oil. Add the taco seasoning and salsa to the skillet, stir to mix evenly. Then remove the mixture and spread evenly into the bottom of a casserole dish.

    Chop the bell pepper and garlic and put in microwave for 2 min until slightly tender (do not overcook). Spread on top of the meat mixture in the dish.

    Slice the tomatoes and layer them on top. Chop the scallions and add them on top.

    Mix the eggs until they are well beaten and pour over the top of the mixture. Sprinkle with salt, pepper, and cheddar cheese.

    Bake uncovered for 25 minutes at 375 degrees until egg is set and slightly golden.

  • Step 6/6

    Let sit for a few minutes before cutting. Top with sour cream and cilantro.
