Mediterranean Roasted Cauliflower

Ingredients

- ½ head cauliflower
Cut cauliflower into florets
Step 2/7
Place cauliflower florets into a large bowl
Step 3/7
- ½ tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp balsamic vinegar
- ¼ tsp basil
- ¼ tsp garlic powder
- ¼ tsp dried thyme
- ¼ tsp salt
- ¼ tsp pepper
Toss with olive oil, lemon juice, vinegar, garlic powder, basil, thyme, salt, and pepper

Cover and marinate in fridge for at least 30 minutes
Step 5/7
Pre-heat oven to 425 degrees F and line a rimmed baking sheet with aluminum foil
Step 6/7
Dump marinated cauliflower out on the prepared baking sheet and spread into an even layer
Step 7/7
Bake in oven for 15-20 minutes
