Marinated plums with cardamom cream

cutting board, knife, fine grater, citrus press, mortar and pestle, 2 large bowls, hand mixer with beaters

- 250 g plums
- ½ lime
- ½ star anise
- 2½ cardamom pods
- 2½ g mint
- cutting board
- knife
- fine grater
- citrus press
- mortar and pestle
- large bowl
Halve, pit, and cut plums into wedges. Finely grate the zest of the lime and juice half of it. Crush the star anise in a mortar. Wipe out the mortar, then lightly crush the cardamom pods, remove the seeds, and grind them finely. Finely slice half of the mint. In a bowl, combine the lime zest, the star anise, and the sugar, rubbing everything together with your fingertips until fragrant. Toss the plums with the sugar mixture, then gently fold in the lime juice and chopped mint. Let sit for at least approx. 20 min.

- 125 g heavy cream
- 2½ g mint
- large bowl
- hand mixer with beaters
Whip the cream with the cardamom until soft peaks form. To serve, spoon a dollop of the cardamom cream onto each plate. Top with the marinated plums and their juices, then garnish with the remaining mint.
