"Using fresh livers are best, but frozen will do too. I personally like to use Guinness for the beer. Some people will use a cooking sherry. I think the beer gives it a more earthy taste. If you want it sweeter using a maple bacon will help."

Ingredients

1 fl oz
Amber or dark beer

2 knives, 2 cutting boards, Skillet, Stove top, Something to stir the ingredients I used a flipper, 2 blenders

    Chop the bacon and onions

    • cup olive oil
    • tbsp salt
    • dash Cinnamon
    • dash Allspice
    • dash smoked paprika powder
    • Skillet
    • Stove top
    • Something to stir the ingredients I used a flipper

    Put olive oil, chopped bacon and chopped onions in skillet. Brown and add spices as cooking. Use a medium to high heat. Be sure to brown and caramelize not burn.

    Once bacon and onions are browned and caramelized, put into a blender or food processor. Try to keep the grease in the pan.

    Chop the liver. Than add to grease pan. Star to brown the liver use a medium heat. After a minute or two add the beer to the pan bring to a simmer. Once to a simmer add the blended bacon and onions to the mixture. Stir and simmer until the beer is completely evaporated.
